Snack Happy

Since I lived off of chocolate over the holidays, I am turning over a new leaf with some healthy snacks around the house.

The kids need them too… after school snacks.   Here’s a few we’ve all enjoyed lately:

  • Edamame:  I love edamame when they serve it in a restaurant.  But I’d never thought about buying it to have at home.  A friend of mine told me about the box at Costco in the freezer case and we recently picked one up.  The box is divided into smaller bags, which are a perfect serving size for me and kids for after school.  One bag feeds us all.  I pop the bag in the microwave for 3 minutes, cut it open, and pour into a serving bowl.  Sprinkle on a little Kosher salt and it’s just about perfect.  Plus it’s full of fiber, protein and vitamins…. and the kids love it.

  • Pomegranate seeds and Clementines too:  I’ve been keeping bowl of pomegranate seeds on the counter and loving them. Nedra over at Cactus Needle Quilts shows a quick and easy way to seed a pomegranate, I can’t wait to try.  I looks sooo much faster than my method.  I’ve also been keeping clementines around for those sweet tooth moments.

  • Celery sticks “boats” filled with Light Laughing Cow Cheese:  They are quick to make and easily everyone’s favorite snack these days.  I cut off the top and bottom of the celery stick, wash it under cold water and dry it off, then spread one wedge of the cheese into the stick.  I usually cut them up into 3 inch sticks and watch them disappear.

What healthy snacks are you eating these days?  I’d love to hear.  I’ve got to keep things interesting or chocolate might start looking good again.

  • I used to live in Draper and took many a class from your mother. I’m also friends with Janean Tullis who led me to your blog.

    Here in So. Utah, pomegranates are easy to grow. In fact, Logandale (1 hr. south of St. George) has a pomegranate festival every fall. Pomegranate jelly is now my favorite jelly.

    • Hi Nedra, I can hardly wait to try this out. I have a whole Pomegranate in my pantry right now. If you don’t mind I’ll switch my link to you. One of these days I’ve got to try Pomegranate jelly, do you have a recipe you could share?

    I’ve been eating oranges – lots of oranges.

  • I’m loving the edamame. At my local grocery, shelled edamame are the same prices as unshelled (are they really shells though?). I put a little sweet chili sauce on mine. I think I’m getting more bang for my buck since the bags contain the same weight and the shells gotta weigh something, right?

    Plain yogurt with apples. I’ve only recently discovered how much I like plain yogurt. :)

    Great ideas. My current favorite snack is cottage cheese with a little jam mixed in.

    A friend of mine keeps carrot sticks in a tupperware container of water in the refrigerator. The cool water keeps the carrots crisp, and it’s easy to reach in and grab a few.

  • I have been eating radishes, I love them!!! Oatmeal, baby bel light cheese. I really like the Arnold sandwich thins in place of regular bread, they are low calorie, filling and good. I also like Dannon light and lively yogurt. I too, ate too much chocolate and junk over the holidays.

  • I’ve always tried to seed pomegranates the fancy way they do on the food network, where they hit the opposing side with some object like a rolling pin and all of the seeds fall perfectly into a bowl. Never can quite master it, usually the seeds end up all over the counter and somehow all over me.

    My boy likes ants (raisins) on his celery logs! It adds some fun sweetness. I like to keep bananas in his reach. When I was a little girl, we sometimes made a special sandwich with peanut butter, honey, raisins & bananas. Thanks for the ideas!

      Hummus and celery or Cucumbers. Go easy on the hummus unless you make your own since it has oil in it. 2 spoonfuls can go a long way!
      I also love Corn Thins! It’s popcorn but mashed into a ricecake shape. So good instead of bread or chips! (buy at whole foods)

  • When I went to Costco I bought some vegetables, separated them into bags and put them in the fridge for “on the go”. We also grilled a whole bag of chicken tenders and put them in the fridge. Low cal for lunches with some low cal dipping sauce.

  • Is edamame soy? I seem to remember it is…

    We’ve been slicing apples and popping popcorn… and eating chocolate… these all look yummy!

    Peanut butter and apples is our personal favorite here.

    My boys adore “pickled carrots” I love Claussen’s hearty garlic dill pickles, when the pickles are gone I just pop some carrot sticks in the garlicy brine and put it back in the fridge. In about a day they have a nice “pickle” flavor, the longer they stay in the brine the more the flavor intensifies.

    Steel cut oatmeal with raisins and almonds.

    Hard boiled eggs
