St. Patrick’s Day Fun

Looking for a bit of St. Paddy’s day fun with the kids?  We’re going to be watching this old classic.

Do you remember it?  It’s Darby O’Gill and the Little People.  And it was one of my favorites as a kid.  I loved the leprechauns, the trickery, and the music…

“Oh she’s my dear, my darlin’ one, my smilin’ and beguilin’ one.  I love the the ground she walks upon.  Me darlin’ Irish girl.”

Guess who’s singing that little lyric?  Why, it’s the very young Sean Connery, that’s who (before he became, Bond, James Bond.)

Now I just need to come up with a green treat.

Maybe some Key Lime Cupcakes.  They look wonderful, but they taste even better.

Mint Brownies are always a big hit at our house.  They may come out the winner.

Either way, it’s the time spent together that we’ll love.

  • omg i totally want to make those key lime cupcakes for st. patty’s day… maybe i will! they sound soooooooo delicious!!!!!!

    I loved that movie–I’m going by the library this morning and am so looking for it!! And those cupcakes look scrumptious, I think I’ll try those out, too (can you use extra flour and baking powder/soda instead of the self-rising flour?)

    • Amy, I did try making them once using this formula: 1 1/8 teaspoons of baking powder and a heavy pinch of salt to 1 3/4 cups of flour… but I have to admit, it did affect the texture. The cupcakes were a bit too heavy. I do live at altitude and that might have been the problem. The best results for me definitely come from using the self-rising flour.

    Here is what I have used with success for self rising flour.
    1 1/2 teaspoon baking powder and 1/2 teaspoon salt and add enough all purpose flour to make 1 cup. Good Luck.

  • Ha! We used to watch that movie every single St. Patricks Day, at my Grandmas. I remember seeing it again in college and thinking “Wow – this is weird!” What fun!

    Another family tradition (though totally “in-authentic”) is Pistachio pudding cake. There’s a recipe on allrecipes (http://allrecipes.com/Recipe/Pistachio-Pudding-Cake/Detail.aspx). It turns out delicious every time! We always frost it with 1 box pistachio pudding, 1 C heavy cream, 1/2 C milk, mixed and chilled for one hour.
